In the pre–absinthe ban era, bistro saucers, served a dual purpose: not only were they coasters but they also indicated the price of the absinthe served. The price printed on the saucer corresponded with the color of its rim, which allowed waiters to add up the charge when the saucers were stacked. When paying the bill, customers generally left the money inside the saucers.
